
2021 Walsh Family Wine "Alta" Plateau
Pét-nat, short for “petillant naturel,” is an effervescently bubbly style of wine made using a process that the French call “method ancestral.” Pét-nat is bottled while still undergoing its first round of fermentation. Residual sugars from the grape juices provide the bubbles as the natural fermentation process resumes and completes in-bottle. Pet-nat wines are often refreshing, fruity, and versatile, as they are both fabulous with food and wonderfully enjoyable on their own.
The “Alta” Plateau was produced from a field blend pick of Chardonnay, Chenin Blanc, and Gruner Veltliner, pressed and fermented together. The hope was to capture a blend of interested aromatics from the three varietals, while also maintaining a bright and vibrant acidity.
